This Hackney eatery is the world’s first zero-waste restaurant, founded by Doug McMaster and Joost Bakker – experts in low waste living. Designed to take waste out of the system, it works directly with farmers, and the in-house composter turns food scraps into compost to grow more.
What we love
Originally from Melbourne, Australia, Silo's signature style cuts out food miles and over-processing, maintaining the nutritional value of the dishes it serves. And it mills its own flour, churns its own butter, upcycles its furniture and receives its deliveries in reusable crates. Oh, and it tastes pretty damn good, too.
